Stock your fridge with fish, chicken, eggs, lean meat, a range of dairy foods, fruit and fresh or frozen vegetables.  Also make sure that you have a variety of gluten-free basics in your store cupboard ready for quick, nutritious meal and snack preparation (always double-check branded processed foods with your official gluten-free food guide).  Take time to experiment with new ingredients and gluten-free grains, and to adapt favourite recipes.  Most ingredients can be bought from supermarkets but visit health foods shops and speciality internet sites too if you want to try more exotic items.

- Canned or dried beans, peas, lentils.
- Gluten-free breakfast cereals, millet flakes.
- Corn crispbread, rice cakes.
- Canned salmon, mackerel, sardines, tuna.
- Rice, corn and gluten-free pasta and noodles.
- Different types of rice - try basmati, jasmine, wild or red rice.

Cooking Tip
Xanthan gum is gluten-free and becomes 'stretchy' when wet which makes bread, cakes and pastry softer, with a less crumbly texture.  Mix in 1 teaspoon of xanthan gum per 125 g/4 oz of gluten-free flour before adding wet ingredients as per your recipe.
